BBQ can be a pain to make if you want to smoke, roast and slave away for hours. It doesn’t always have to be, though. I love pulled pork or chicken or brisket. You too? Then dust off that crock pot because we’re making BBQ pulled chicken in that bad boy!

While you might not be able to beat your favorite BBQ joint, you sure can cook up something tasty without a lot of fuss. The most difficult part is shredding the meat, and after hours in the crock pot, you’ll be surprised just how little work that is.
Dark meat with some connective tissue will fair much better to low heat slow cooking, so I recommend getting boneless skinless chicken thighs or legs. If you can’t find boneless and skinless then you’ll have your work cut out for you, but it’ll all be worth it.
Since you’ll be cooking down everything in the crock pot, you don’t have to be perfect with your onion dice. Rough dice is totally fine, no need for perfection. Same with the garlic. No seriously, I won’t tell anyone. Your secret is safe with me. ;-)…
